I love rooster sauce!
I saw this article in the NY Times today about Sriracha, that Asian delicious hot chili sauce that is easily recognizable by the big rooster on the bottle. Coincidentally, I’ve been talking with a friend who recently discovered this red goopy condiment and now puts it on everything he eats. He even got a bottle to keep in his office. Now that’s love.
Asian restaurants often have Sriracha on the table and now it is starting to show up at other restaurants too. I was recently at Good Stuff Eatery where they have a Sriracha mayo for your fries (or burger…whatever you want). You can buy it in Asian markets or in your regular old grocery store. It is everywhere now.
Unlike most other hot sauces, it is thicker so it sticks to your food and it has a more complex flavor. I enjoy a dash or ten of Texas Pete on all sorts of things, but it tastes of only vinegar and *hot*. That’s about it. Sriracha has a great spice that isn’t overpowered by vinegar. Just a few drops is plenty.
If you haven’t tried the rooster sauce, I highly recommend it. And be sure to keep that tip clear… it is known to clog. My sister had a bottle explode on her as she tried to force the stuff out of a clogged tip.

“The Rooster” isn’t the only brand of siracha. There is a brand available at many Asian markets with a crane on the bottle offered in various flavors such as garlic, and ginger (as well as a few others).
Muy Fong which is the company that makes the rooster also makes a really good chunkier version called sambal olek which is worth a try.
